Benjamin Gow, 28, of Estella, was due to appear in Wagga Local Court on Wednesday to face a charge of recklessly damaging the iconic statue.
The court heard Gow had written a letter saying he was unwell and unable to attend.
He asked for the matter to be adjourned to later date. The matter was adjourned for two weeks, until September 25, and Gow's bail was continued.
Gow was charged on July 29 after the alleged vandalism occurred about 4pm on July 27.
The alleged incident dislodged the dog and tuckerbox from their base, causing them to fall into a surrounding fountain, at the Gundagai rest area where the statue is publicly displayed.
